Hello,
8 cat standard roto league, 11-team.
Should I drop any of Bertans, B. Clarke, or Dort for Cameron Johnson, Pritchard, or T Maxey?

You absolutely do not drop Bertans or Clarke. Dort is definitely expendable in a shallower league. Maxey is an okay add if you're trying to soak up his value for the next 4 games this week, but after that, he's most likely a drop candidate. There's also no guarantee that he's solid even these next 4 games, as we might see other players, including Simmons, return.
